Healthy Chocolate Bagels! (Vegan option)

You guys know I’m a huge bagel fan, and have many bagel recipes on here. You can try my Blueberry ones, Cinnamon, Orange Cranberry, and the list goes on. You can click the links to get those recipes. Anyways, I decided it was high time to make chocolate ones, because…why not?!?!

I was going to add chocolate chunks too, but I totally forgot. Have you ever been working in the kitchen, and you just get in a rhythm, and skip things?? Just me?? There were a few things I had going at the time, so it just slipped my mind. How chocolate slips your mind I’m really not sure, but it happened.

Not sure, but I think I’d add more cocoa next time. Just because I love a rich, intense, chocolate flavor.

I think my next recipe will be a raspberry version of my copycat recipe orange cream chocolate. So keep your eye out for that in the near future!!!

Healthy, Chocolate Bagels! (Vegan Option)

Ingredients

Bagels

  • 1 & 1/2 cup Warm water (between 100F-110F)
  • 2 & 3/4 tsp Quick rise yeast
  • 3 & 1/2 cups Spelt flour
  • 1/2 cup Cocoa Powder (Heaping)
  • 2 tbsp Pyure (Or preferred sweetener)
  • 1 tsp Pure Vanilla Extract
  • 1 Pinch Salt

Hot water Bath

  • 2 quarts Water
  • 1/4 cup Honey

Egg wash

  • 1 Egg White (Almond Milk for Vegan option)

Instructions

Making Bagels

  • Mix the warm water and yeast. Cover with a tea towel, and let sit for 5 minutes.
  • While the yeast mixture sets, pour the rest of the dry ingredients, and vanilla into your food processer, kitchen aid, or whatever mixer you're using, and mix. (I use our ninja, with a dough blade.)
  • Knead the dough on a floured surface for 4 minutes, then place the dough in a large bowl that's coated with olive oil. Cover with a towel to rise for 60-90 minutes, or until doubled in size.
  • When the time is up, punch the dough down. Divide it into 12 pieces, and roll them into balls. Poke your thumb through the middle, and shape a bagel.
  • Place on baking sheets with parchment paper.
  • Preheat the oven to 425F.

Hot Water Bath

  • Pour 2 quarts of water, and the honey into a large saucepan.
  • Bring to a boil.
  • Drop the bagels in, about 6 at a time, or as many as you can fit without them touching. (It's ok if they bump into each other, they just gotta have some wiggle room)
  • Cook them for 1 minute on each side. Remove and brush them with egg white. (Almond milk for the Vegan option)
  • Put the rest in, and repeat.
  • Bake for 11 minutes, then turn the baking sheets. Bake for 11 more minutes, or another few minutes if you want them more browned.
  • Leave on the cookie sheets for 20 minutes, then place on a cooling rack to cool completely.
  • Store in the fridge in an airtight container for up to 2 weeks, or in the freezer up to 6 months.

 

 

 

 

Mint-Chocolate, Almond Roca! (4-ingredients) Keto, THM, and Low-Carb

A while ago I was going through @thebigmansworld Instagram looking for an easy recipe to make. I found a recipe for Almond Roca, and made it. It was delish, so I decided to make my own version.

I love Chocolate and Mint, so it’s only logical to try this flavor next right?!?!! I could probably try salted caramel too since it’s already kind’ve caramelly.

Lately I’ve been kinda out of recipe ideas, so any help would be welcome. If you have recipe ideas, or recipes you like and want me to make a healthy version of…I’d love that!!

Honestly, I’ve made this twice. The original version, and the mint, and I don’t know how to get it to not burn slightly. I cooked it on medium heat, and on low heat. I stirred continuously both times, and they still had some burnt sweetener or something in it. Just be sure to not pour that into the dish. It’s heavier so it should settle in the bottom, and allow you to pour the good stuff in.

Mint Chocolate, Almond Roca (Keto, Low-Carb, THM)

Ingredients

  • 1 cup Butter
  • 1 tbsp Pyure (or preferred sweetener)
  • 1/2 cup Chopped Almonds
  • 1 cup Lily's Mint Chocolate Chips

Instructions

  • Chop the almonds and pour 1/4 of the almonds into a bread pan lined with parchment paper.
  • Put the butter and Pyure in a medium saucepan, and heat on low heat until it begins to bubble.
  • Heat to 300F, or the Hard Crack on your candy thermometer. Be sure to stir continuously.
  • Pour the mixture over the almonds in the bread pan, and let sit for 5 minutes.
  • After the 5 minutes, evenly spread the Mint Chocolate Chips over the mixture in the pan.
  • Cover with foil and let sit another 5 minutes. Then spread it out evenly with a spatula.
  • Pour the remaining chopped almonds over the top, and chill in the fridge for 2 hours, or overnight.
  • Remove from the fridge and cut into pieces. Enjoy!!!
  • Store in an airtight container in the fridge, for up to 2 weeks, and in the freezer up to 6 months.

 

 

 

 

 

Healthy, Black Raspberry Crisp! (5-ingredient) (Vegan Option)

I don’t know about for you all, but around here it’s berry season. All the wild Blackberry bushes are going CrAzY!! A few weeks ago I picked wild Raspberries and made this crisp recipe. It turned out, so I decided to make it again with blackberries. It’s delish, and the perfect summer dessert!

If you love fruit, and you love granola…this will be your Achillies Heel! It doesn’t take long to make and like the title says, it only takes 5-ingredients. Really doesn’t get better than that does it??

You can obviously make this recipe with other fruits, I just feel like berries are the best. Also, they’re in season right now so it’s the most convenient fruit to come by. Did I mention they’re FREE!! Haha I’m all about that free food life. Plus, wild berries are the cleanest you’ll get. Never sprayed with anything or altered in any way, so no hybrid junk.

Healthy, Blackberry Crisp! (Vegan Option) (5-ingredients)

Ingredients

Berry Filling

  • 5 Cups Fresh Blackberries (I used 7 because I'm extra like that)
  • 1 tbsp Lemon Juice
  • 3-4 tbsp Pure Maple Syrup

Crumble Topping

  • 4 tbsp Butter (Vegan Butter for vegan option)
  • 2 cups Old-Fashioned Oats
  • 2 tbsp Pure Maple Syrup

Instructions

  • Preheat the oven to 350F.
  • Pour your berries into a 9x13 Pyrex dish. Mix in the 3-4 tbsp Maple syrup, and the lemon juice. (Trust me, it saves on dishes)
  • In a medium mix your butter, oats, and remaining maple syrup. (Make sure the butter is softened)
  • With a spoon or your hands, divide the oat mixture over the berries making and even topping over the whole dish.
  • Bake for 40 minutes. You can eat right away or let it cool down. (We ate with Vanilla ice cream. *GASP so unhealthy I know!! You can get healthy ice cream or even make your own)
  • Store in the fridge in an airtight container for up to 2 weeks!

 

 

 

2-ingredient, Healthy, Vegan, Popsicles (Banana, Strawberry Banana, and Chocolate)

So I’m not sure about where you guys are from, but here in PA it’s nice and HOT!!! Its 86 with a real feel of 97. I wanted to make something that was easy, refreshing, and didn’t require the oven. Thus, these popsicles.

You can obviously make them however you want, and add what you want, I thought of adding peanut butter to the bottom of the chocolate ones, but alas I didn’t. You can even make other flavors if you’d like. I’ll probably make chocolate peanut butter ones, and peanut butter ones next….because you all know my love for all things peanut butter, AND peanut butter and chocolate together!

UPDATE: Had one of the Chocolate ones today and texture is on point! They’re nice and smooth, not icey. Also the peanuts on the bottom adds a nice crunch and I would definitely recommend!

This is a picture of me asking my mom if she had licked the popsicle, hahaha!! What I do, is take a picture of my mom first, to get the lighting right. Then she can take the picture of me and everything is set up. I shoot in manual on my camera, so it can be difficult if you don’t know what you’re doing.

Ingredients

Banana Flavored

  • 4 Medium Bananas
  • Granola (For garnish on top)

Strawberry Banana Flavored

  • 2-3 medium bananas
  • 4-5 medium strawberries
  • Granola (For garnish on top)

Chocolate flavored

  • 4 medium bananas
  • 2 tbsp Cocoa powder (Cacao)
  • Peanuts (For garnish on top)

Instructions

  • For each flavor you just blend the ingredients together and pour into your popsicle molds. Garnish with granola or peanuts if desired. Freeze for 2-3 hours or until set.

 

 

 

 

 

Easy, Healthy, 3-ingredient Brownies (Vegan)

We had a ton of overripe bananas in the freezer, and I was trying to come up with a recipe that was simple, and used up the bananas. So I threw a few ingredients together that I hoped would work together.

They are more of a fudgy brownie than a chewy one. Probably better if you let them cool off before eating them. Either way they’re good though. You can add more cocoa and peanut butter if you want.

When you go to check them, the top will seem done. Make sure to keep them in until at least 45 minutes. The toothpick may even come out not completely clean when the time is up, but they’ll be done enough. If you want to keep them in longer, then that’s totally up to you.

Easy, Vegan, 3-ingredient, fudgy brownies

Ingredients

  • 4-5 Super ripe bananas
  • 3-4 tbsp Cocoa powder (depending on desired richness)
  • 3-4 tbsp Natural Peanut butter

Instructions

  • Preheat the oven to 350F
  • Blend the bananas in your food processor or blender until smooth.
  • Add the cocoa and peanut butter and blend again until fully incorporated.
  • Pour into a sprayed 8x8 pyrex dish and bake on 350F for 45-55 minutes. The top will look done before they're done. They will be very moist, and fudge like though when done.
  • Store in an airtight container in the fridge for up to a week!
